15-Minute Creamy Tortellini (Easy Weeknight Dinner)
When time is short but you crave something deeply comforting, this creamy tortellini is the answer. By using store-bought fresh tortellini and whipping up a simple garlic-cream sauce in the same amount of time it takes to boil the pasta, you have a luxurious dinner on the table in 15 minutes flat.
Ingredients (4 servings)
- 14 oz (400 g) fresh cheese or meat tortellini
- 1 tbsp butter
- 1 small yellow onion, finely chopped
- 1 garlic clove, minced
- 3/4 cup (200 ml) heavy whipping cream
- 1/2 tsp kosher salt
- Freshly ground black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the tortellini according to the package instructions (usually 3-5 minutes for fresh pasta). Drain well.
- While the pasta water is boiling, melt the butter in a large skillet over medium heat.
- Add the finely chopped onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for 1 more minute.
- Pour the heavy cream into the skillet and let it gently simmer for 2-3 minutes so it begins to thicken. Season with salt and pepper.
- Toss the cooked tortellini directly into the creamy sauce.
- Stir gently until the pasta is well coated. Remove from heat and stir in the Parmesan cheese if using.
Pro Tips
- Add Greens: Stir in a handful of fresh baby spinach during the last minute of cooking the sauce for a pop of color and extra nutrients.
- Don’t Overcook: Fresh tortellini cooks very fast and can become mushy. Keep an eye on the boiling pot!
