Apple-Cider Glazed Roasted Chicken Thighs (42g Protein)

An Autumn seasonal main dish. Bone-in, skinless thighs are used to maximize flavor and protein while controlling the fat content typically found in skin-on poultry.
Ingredients (4 servings)
- 2 lbs (900 g) bone-in chicken thighs, skin removed
- 1 cup (240 ml) unsweetened apple cider
- 1 tbsp (15 ml) Dijon mustard
- 1 tbsp (15 ml) honey
- 1 tsp (3 g) dried thyme
Instructions
- Reduce the apple cider in a saucepan by half over high heat. Whisk in the mustard and honey.
- Place the chicken on a baking rack over a sheet pan.
- Brush with the cider reduction and sprinkle with the thyme.
- Roast at 400°F (200°C) for 35–40 minutes until the internal temperature reaches 165°F (74°C).

- 360° Heat: Roasting the chicken on a rack allows heat to circulate all around, ensuring even cooking and preventing the bottom from becoming soggy.
