Famous for their lace-edged appearance, these Finnish crepes achieve a delicate, golden crust thanks to a well-rested batter and high heat.
Ingredients (12 crepes)
- 3 eggs
- 2.5 cups (600 ml) whole milk
- 1.25 cups (155 g) all-purpose flour
- 1 tsp (5 ml) sugar
- 1/2 tsp (3 g) salt
- Unsalted butter for frying
Instructions
- Whisk eggs and milk. Gradually add flour, sugar, and salt until smooth.
- Let the batter rest for 30 minutes at room temperature.
- Heat a non-stick skillet over medium-high heat. Add a small piece of butter.
- Pour a small amount of batter into the center and immediately tilt the pan in a circular motion to spread the batter thin.
- Fry until the edges are brown and lace-like, then flip and cook the other side for 30 seconds.
