Classic Beef Stroganoff (Finnish Style)

The Finnish version of Stroganoff is defined by its richness and the inclusion of pickles for acidity. A slow- simmered, melt-in-your-mouth comfort classic.
Ingredients (4 servings)
- 1.5 lbs (680 g) beef chuck, cut into thin strips
- 2 tbsp (28 g) butter
- 1 yellow onion, sliced
- 2 cups (480 ml) beef broth
- 1 cup (240 ml) sour cream
- 1/2 cup (70 g) dill pickles, finely diced
- 1 tbsp (15 ml) Dijon mustard
- Salt and pepper to taste
Instructions
- Sear the beef strips in butter over high heat in a heavy pot until browned.
- Add the sliced onions and sauté until softened.
- Pour in the beef broth. Cover and simmer on low heat for exactly one hour.
- Stir in the sour cream, mustard, and diced pickles.
- Heat through for 5 minutes over low heat. Do not allow the sauce to boil after the sour cream is added, as the emulsion may break.

- The Right Cut: Choose beef chuck or round steak. These cuts contain connective tissue that breaks down during a long simmer, resulting in melt-in-your-mouth texture that leaner cuts cannot achieve.
