Classic Chicken Cacciatore (45g Protein)

A robust hunter-style stew featuring bone-in chicken for maximum flavor and protein retention, simmered with bell peppers, mushrooms, and a rich tomato base.
Ingredients (6 servings)
- 2 large bell peppers, sliced
- 1 large yellow onion, diced
- 8 oz (225 g) cremini mushrooms, sliced
- 4 cloves garlic, minced
- 3 lbs (1.4 kg) bone-in, skinless chicken thighs
- 28 oz (800 g) crushed tomatoes
- 1/2 cup (120 ml) dry white wine
- 2 tbsp (6 g) dried oregano
- Salt and black pepper to taste
Instructions
- Brown the chicken thighs in a large pot over medium-high heat until golden. Remove and set aside.
- Sauté the peppers, onions, and mushrooms in the same pot until softened.
- Deglaze the pot with white wine, scraping the bottom for flavor.
- Add the tomatoes, garlic, and oregano. Return the chicken to the pot.
- Cover and simmer for 35–40 minutes until the chicken is tender and falling off the bone.
Pro Tips
- Bone-In Flavor: Keep the thighs bone-in — the bones add gelatin and depth to the braise, and the skinless cut keeps the protein count high and the fat lower.
- Deglazing: Scraping the browned bits from the bottom of the pot with the white wine is where most of the sauce’s flavor lives.
