Classic Nordic Blueberry Pie (Mustikkapiirakka)

This dessert features a buttery, cookie-like shortcrust base topped with juicy blueberries and a tangy, creamy filling. A Finnish summer favorite.
Ingredients (8 servings)
- 1/2 cup (115 g) butter, softened
- 1/2 cup (100 g) granulated sugar
- 1 large egg
- 1 1/2 cups (190 g) all-purpose flour
- 1 tsp (4 g) baking powder
- 2 cups (300 g) blueberries (fresh or frozen)
- 1 cup (240 g) sour cream or plain Greek yogurt
- 1 large egg
- 1/4 cup (50 g) granulated sugar
- 1 tsp (5 ml) vanilla extract
Instructions
- Preheat oven to 400°F (200°C).
- Cream the butter and sugar together until light. Beat in the egg.
- Mix the flour and baking powder, then stir into the wet ingredients to form a soft dough.
- Press the dough onto the bottom and up the sides of a greased 10-inch tart pan or pie dish.
- Spread the blueberries evenly over the base.
- Whisk together the sour cream, egg, sugar, and vanilla. Pour this mixture over the blueberries.
- Bake for 25–30 minutes until the crust is golden and the filling is set.
Pro Tips
- Frozen Berries: If using frozen blueberries, do not thaw them beforehand. Toss them with a teaspoon of potato starch or cornstarch before placing them on the crust to prevent the base from becoming soggy.
