Creamy Chanterelle Mushroom Sauce

Ingredients (4 servings)
- 2 cups (120 g) fresh chanterelles (or oyster mushrooms), cleaned and torn
- 1 shallot, finely minced
- 1 cup (240 ml) heavy cream
- 2 tbsp (28 g) unsalted butter
- Salt and white pepper to taste
Instructions
- Place mushrooms in a wide skillet over medium heat without any oil or butter. Sauté until the mushrooms release their liquid and it evaporates completely. This intensifies the flavor.
- Add the butter and minced shallots. Cook for 3–4 minutes until the shallots are soft and the mushrooms start to brown.
- Pour in the heavy cream. Simmer gently for 6–8 minutes until the sauce reduces and coats the back of a spoon. Season with salt and white pepper.

- Dry Sauté First: Sauté the mushrooms dry before adding any fat. This evaporates their moisture and concentrates the earthy forest flavor.
