Ingredients (4 servings)
- 10 oz (300 g) chicken breast, sliced into strips
- 8 oz (250 g) dry pasta (penne, fusilli, or spaghetti)
- 1 medium yellow onion, finely chopped
- 2 garlic cloves, minced
- 3/4 cup (200 ml) heavy whipping cream
- 5 oz (150 g) block of feta cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- Freshly ground black pepper
- Fresh basil for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve about 1/4 cup of the starchy pasta water before draining.
- In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic, sautéing until softened.
- Add the chicken strips to the skillet and cook until lightly browned and cooked through (about 5-7 minutes).
- Lower the heat to medium and pour in the heavy cream. Let it simmer gently for 2 minutes.
- Crumble the block of feta cheese directly into the skillet. Stir gently until the feta partially melts and thickens the sauce.
- Season with black pepper and salt (taste first, as feta is naturally salty!).
- Toss the drained pasta into the skillet. If the sauce is too thick, add a splash of the reserved pasta water.
- Garnish with fresh basil and serve immediately.
