Creamy Nordic Chicken Fricassée (Kanaviillokki)

This comforting poultry dish is a nostalgic favorite in Finnish schools and homes. It features tender chicken pieces in a silky, mild curry-scented white sauce, traditionally paired with a sweet berry jelly.
Ingredients (4 servings)
- 1.5 lbs (680 g) chicken breast or thighs, cut into bite-sized pieces
- 3 tbsp (42 g) butter
- 3 tbsp (25 g) all-purpose flour
- 2 cups (480 ml) chicken broth
- 1/2 cup (120 ml) heavy cream
- 1 tsp (5 g) mild yellow curry powder
- 1/2 tsp (3 g) salt
- 1 tsp (5 ml) lemon juice
- Blackcurrant jelly (or Lingonberry jam) for serving
Instructions
- In a large skillet or pot, melt the butter over medium heat.
- Stir in the flour and cook for 1 minute (do not let it brown).
- Slowly whisk in the chicken broth, making sure there are no lumps.
- Add the chicken pieces, curry powder, and salt.
- Simmer over low heat for 15–20 minutes until the chicken is cooked through.
- Stir in the heavy cream and lemon juice. Simmer for another 2 minutes until the sauce is thick and glossy.
- Serve over white rice with a side of blackcurrant jelly.
