When you need a comforting, luxurious dinner but only have 20 minutes, this Creamy Nordic Salmon Pasta is the answer. It relies on the simple, clean flavors of the Scandinavian kitchen: fresh salmon, heavy cream, and a bright hit of lemon.

Ingredients (4 servings)

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of the pasta water before draining.
  2. While the pasta is boiling, melt the butter in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened.
  3. Add the cubed salmon to the skillet. Cook for 2 minutes, gently turning the pieces until they are lightly browned on the outside.
  4. Pour in the white wine (or stock) and let it simmer for 1 minute to reduce slightly.
  5. Reduce the heat to low and stir in the heavy whipping cream. Let the sauce simmer gently for 2-3 minutes until it thickens slightly. Do not let it boil vigorously.
  6. Season with salt and black pepper.
  7. Toss the drained pasta directly into the creamy salmon sauce. If the sauce is too thick, add a splash of the reserved pasta water.
