A staple of the Finnish forest harvest, Sienisalaatti is traditionally rich in heavy cream. Our version uses high-protein quark or Greek yogurt to create a clean side dish with a superior macro profile.
Ingredients (4 servings)
- 2 cups (150 g) sautéed wild mushrooms (e.g., chanterelles or porcini)
- 1 cup (240 g) plain Greek yogurt or quark
- 1 small yellow onion, finely diced
- 1/2 tsp (1 g) white pepper
- 1 tbsp (5 g) fresh parsley, chopped
- 1/2 tsp (3 g) sea salt
Instructions
- If using salted mushrooms, soak them in water for 2 hours, then drain and chop. If using fresh, sauté until dry.
- In a bowl, mix the prepared mushrooms with the Greek yogurt and diced onion.
- Season with the white pepper and parsley.
- Let the salad rest in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
