Creamy Roasted Pumpkin Soup

Ingredients (4 servings)
- 1 medium sugar pumpkin (approx. 2 lbs / 900 g) or 30 oz (850 g) canned pumpkin puree
- 3 cups (720 ml) vegetable broth
- 1 yellow onion, diced
- 1/2 cup (120 ml) heavy cream
- 2 tbsp (30 ml) olive oil
- 1/2 tsp (3 g) salt
Instructions
- If using fresh pumpkin, halve and de-seed. Brush with olive oil and roast at 400°F (200°C) for 45 minutes until soft. Scoop out the flesh.
- In a large pot, sauté the onion in olive oil until translucent. Add the pumpkin flesh (or canned puree) and the vegetable broth.
- Simmer for 10 minutes. Use an immersion blender to puree the soup until smooth. Stir in the heavy cream and salt. Warm through before serving.
