Creamy Salmon & Potato Casserole (Lohikiusaus)

In Finland, this beloved dish is called Lohikiusaus (literally “Salmon Temptation”). It is the ultimate everyday comfort food. The starchy potatoes release their goodness into the cream as it bakes, creating a naturally thick, savory sauce that hugs the tender bites of salmon.

Ingredients (4 servings)

  1. Preheat your oven to 400°F (200°C). Generously grease a 9x13-inch baking dish with butter.
  2. Spread half of the potato and onion mixture evenly into the bottom of the baking dish.
  3. Top with the fresh dill and the cubed salmon. Season with half of the salt and pepper.
  4. Cover with the remaining potatoes and season with the remaining salt and pepper.
  5. In a small jug, mix the heavy cream and milk. Pour the mixture evenly over the casserole.
  6. Bake uncovered for 45–50 minutes, or until the potatoes are fork-tender and the top is golden brown.

Serving

Let the casserole rest for 10 minutes after removing it from the oven before serving. This allows the creamy sauce to set and thicken. Serve alongside a fresh green salad.
