Cabbage is an underrated hero in the kitchen. These baked cabbage patties (or fritters) are a clever Nordic way to turn humble green cabbage into something crispy, savory, and completely addictive. Baking them in the oven makes the process mess-free!

Ingredients (4 servings)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Finely shred the cabbage. Bring a large pot of water to a boil, drop the cabbage in, and blanch for 5 minutes until softened. Drain well.
  3. Squeeze as much excess moisture out of the blanched cabbage as possible using a clean kitchen towel or your hands.
  4. Transfer the dry cabbage to a bowl. Mix in the eggs, breadcrumbs, salt, pepper, paprika, and olive oil until well combined.
  5. Form the mixture into small, flat patties (about the size of your palm) and place them on the prepared baking sheet.
  6. Bake for 25–30 minutes, flipping them carefully halfway through, until both sides are golden brown and crispy.

Serving

Serve hot with a dollop of sour cream, Greek yogurt, or a fresh herb dipping sauce.
