Crispy Baked Cabbage Patties
Cabbage is an underrated hero in the kitchen. These baked cabbage patties (or fritters) are a clever Nordic way to turn humble green cabbage into something crispy, savory, and completely addictive. Baking them in the oven makes the process mess-free!
Ingredients (4 servings)
- 1 small head green cabbage (about 1.5 lbs / 700 g)
- 2 large eggs
- 1/2 cup (50 g) plain breadcrumbs (or panko)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 tbsp olive oil
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Finely shred the cabbage. Bring a large pot of water to a boil, drop the cabbage in, and blanch for 5 minutes until softened. Drain well.
- Squeeze as much excess moisture out of the blanched cabbage as possible using a clean kitchen towel or your hands.
- Transfer the dry cabbage to a bowl. Mix in the eggs, breadcrumbs, salt, pepper, paprika, and olive oil until well combined.
- Form the mixture into small, flat patties (about the size of your palm) and place them on the prepared baking sheet.
- Bake for 25–30 minutes, flipping them carefully halfway through, until both sides are golden brown and crispy.
Serving
Serve hot with a dollop of sour cream, Greek yogurt, or a fresh herb dipping sauce.
