Easy Chicken Coconut Curry

A modern favorite in Nordic households. Lean chicken meets a creamy, mild coconut sauce in this fast, high- protein 40-minute meal.
Ingredients (4 servings)
- 2 lbs (900 g) chicken thighs or breasts, cut into bite-sized pieces
- 2 cans (13.5 oz / 400 ml each) coconut milk
- 1.5 tbsp (10 g) yellow curry powder
- 1 tbsp (10 g) fresh ginger, grated
- 3 cloves garlic, minced
- 2 tbsp (30 ml) oil
- Salt to taste
Instructions
- Heat oil in a large pot or deep skillet. Brown the chicken pieces over medium-high heat.
- Add the garlic, ginger, and curry powder. Stir for 1 minute until the spices are fragrant.
- Pour in the coconut milk. Bring to a gentle simmer.
- Reduce heat and cook for 15–20 minutes until the sauce has thickened and the chicken is tender.
- If using spinach or bell peppers, stir them in during the last few minutes of cooking.
