Easy Fluffy Chocolate Mousse
Making restaurant-quality chocolate mousse at home is surprisingly simple. This classic recipe uses no gelatin; instead, it relies on whipped egg whites and heavy cream to create a texture that is light as a cloud, yet intensely chocolatey.
Ingredients (4 servings)
- 7 oz (200 g) high-quality dark chocolate (at least 70% cocoa)
- 3 large eggs, separated (whites and yolks in different bowls)
- 2 tbsp granulated sugar
- 3/4 cup (200 ml) cold heavy whipping cream
- A tiny pinch of salt
Instructions
- Break the dark chocolate into small pieces. Melt the chocolate either in a heatproof bowl set over a pot of simmering water (a double boiler) or in the microwave in 30-second bursts. Set aside to cool slightly.
- In a clean, completely grease-free bowl, whip the egg whites with a tiny pinch of salt until stiff peaks form.
- In a separate bowl, quickly whisk the egg yolks and the sugar together until lightened.
- In a third bowl, whip the cold heavy whipping cream until soft peaks form.
- Stir the slightly cooled melted chocolate into the egg yolk mixture until smooth.
- Using a rubber spatula, gently fold the whipped egg whites into the chocolate mixture in two batches. Do not stir vigorously; you want to keep the air inside the whites.
- Finally, gently fold in the whipped heavy cream until no white streaks remain.
- Divide the mousse into 4 serving glasses or ramekins.
- Refrigerate for at least 2 hours to allow the mousse to set properly before serving.
Pro Tips
- Chocolate Quality: Because there are so few ingredients, the quality of the chocolate shines through. Use a premium dark chocolate bar rather than chocolate chips (which contain stabilizers that prevent smooth melting).
- Folding Technique: The secret to a fluffy mousse is folding, not stirring. Draw your spatula down the middle of the bowl, scrape the bottom, and fold the mixture over itself.
