Fluffy Finnish Oven Pancake (Pannukakku)

Unlike thin crepes, this oven-baked pancake is known for its dramatic rise, cratered surface, and crispy golden ridges. A classic Finnish breakfast.
Ingredients (6 servings)
- 3 eggs
- 3 cups (720 ml) whole milk
- 1.5 cups (180 g) all-purpose flour
- 1/4 cup (50 g) sugar
- 1/2 tsp (3 g) salt
- 4 tbsp (56 g) melted butter
Instructions
- Preheat oven to 425°F (220°C).
- Whisk eggs and sugar until pale. Add milk, salt, and melted butter.
- Whisk in the flour until just smooth.
- Pour the batter into a greased 9x13 inch pan.
- Bake for 25–30 minutes until deep golden brown.
