High-Protein Archipelago Malt Bread (Saaristolaisleipä) (12g Protein)

A dark, dense, and sweet bread from the Finnish archipelago. Fortified with vital wheat gluten, soy flour, and protein-rich seeds to reach 12g of protein per slice.
Ingredients (1 loaf (10 slices))
- 1.5 cups (360 ml) buttermilk
- 1/2 cup (170 g) molasses
- 1 cup (120 g) rye flour
- 3/4 cup (90 g) vital wheat gluten
- 1/2 cup (60 g) soy flour
- 1 cup (110 g) malt flakes
- 1/2 cup (70 g) sunflower seeds
- 1 tsp (6 g) salt
- 1 packet (7 g) yeast
Instructions
- Mix the warm buttermilk and molasses with the yeast.
- In a separate bowl, combine the rye flour, gluten, soy flour, malt, salt, and seeds.
- Stir the wet and dry ingredients together until a sticky, thick batter forms.
- Pour into a greased loaf pan and let rise for 1.5 hours in a warm spot.
- Bake at 350°F (175°C) for 1 hour. Halfway through, brush the top with a mixture of molasses and water.
