Honey Soy Glazed Salmon Stir-fry with Protein Noodles (44g Protein)

A high-volume stir-fry that combines the rich omega-3s of salmon with the high protein yield of specialized noodles, packed with crisp Nordic-friendly vegetables like broccoli and carrots.
Ingredients (4 servings)
- 1 lb (450 g) salmon fillet, cubed
- 8 oz (225 g) protein-fortified noodles
- 2 cups (160 g) broccoli florets
- 1 cup (130 g) sliced carrots
- 1/3 cup (80 ml) soy sauce
- 2 tbsp (30 ml) honey
- 1 tbsp (15 ml) olive oil
Instructions
- Cook the protein noodles until just al dente.
- Heat the oil in a wok. Sear the salmon for 2 minutes and remove it.
- Stir-fry the broccoli and carrots for 5 minutes until tender-crisp.
- Return the salmon to the pan with the noodles.
- Pour in the soy sauce and honey. Toss over high heat for 60 seconds until the sauce thickens and coats every strand.
Pro Tips
- Noodle Gelatinization: Under-cook the noodles by 1 minute; they will absorb the honey-soy sauce and finish cooking in the wok without becoming mushy.
