- 12 oz (340 g) salmon fillet
- 1 cup (150 g) shelled edamame, steamed
- 1 cup (185 g) cooked quinoa or brown rice
- 1/2 cucumber, sliced
- 1 tbsp (15 ml) honey
- 2 tbsp (30 ml) soy sauce
Instructions
- Glaze the salmon with the honey and soy sauce; bake at 400°F (200°C) for 12 minutes.
