Ingredients (4 servings)
- 1.5 lbs (680 g) salmon fillet, cut into 1-inch cubes
- 1/4 cup (60 ml) soy sauce
- 2 tbsp (30 ml) honey
- 1 tbsp (15 ml) fresh ginger, grated
- 1 cup (180 g) dry quinoa
- 1 red bell pepper, cut into chunks
- 2 cups (480 ml) vegetable broth (for the quinoa)
Instructions
- Whisk the soy sauce, honey, and ginger together. Marinate the salmon for 15 minutes.
- Cook the quinoa in the vegetable broth instead of water to boost savory depth.
- Thread the salmon and pepper chunks onto skewers.
- Grill or pan-sear for 3–4 minutes per side until the salmon is opaque. Brush with the remaining marinade during the final minute to caramelize.
- Serve the skewers over the fluffy cooked quinoa.

- Thermal Control: Don’t overcook the salmon. It should be slightly translucent in the center when removed from the heat to ensure it stays moist.
