Ingredients (4 servings)
- 1.5 lbs (680 g) Italian pork or turkey sausages
- 3 large bell peppers, sliced
- 1 large onion, sliced
- 1 tsp (3 g) dried oregano
- 1/2 tsp (1 g) red pepper flakes
- Salt to taste
Instructions
- The Searing Process: Heat a large cast-iron skillet over medium-high heat. Add the sausages and sear for 3–4 minutes per side until deeply browned. Remove the sausages and set aside.
- The Pepper Braise: In the same skillet, add the sliced onions and peppers. Use the moisture from the vegetables to deglaze the pan. Cook until softened and slightly charred.
- Return the sausages to the pan, add a splash of water, cover, and steam until the internal temperature reaches 160°F (71°C).
- Sprinkle with oregano, red pepper flakes, and salt before serving.
