This is a brilliant low-carb (and keto-friendly) adaptation of the classic Nordic Lohikeitto. By skipping the traditional potatoes, you get a lighter but incredibly satisfying and rich soup that’s packed with healthy omega-3s and comes together in just 20 minutes.

  1. In a heavy-bottomed pot, melt the butter over medium heat. Add the chopped onion and sliced leek. Sauté for about 3-4 minutes until they soften.
  2. Pour in the seafood stock and bring the liquid to a gentle simmer.
  3. While the broth is heating up, cut the salmon fillet into bite-sized cubes.
  4. Stir the heavy cream into the simmering broth.
  5. Gently add the salmon cubes. Turn the heat down to low, cover the pot, and let the fish poach for 5–7 minutes. Do not let it boil rapidly, as the salmon will overcook and become dry.
  6. Season with salt and pepper to taste.
  7. Remove from the heat and stir in a generous handful of fresh dill right before serving.
