Nordic Berry and Yogurt Pie (Marjainen rahkapiirakka)

The ultimate Finnish coffee table staple. A buttery shortcrust filled with tangy yogurt custard and fresh berries.
Ingredients (8 servings)
- 1.5 cups (190 g) all-purpose flour
- 1/2 cup (115 g) cold butter, cubed
- 1/4 cup (50 g) sugar
- 1 egg
- 1.5 cups (350 g) full-fat plain Greek yogurt
- 1 large egg
- 1/3 cup (65 g) sugar
- 1 tsp (5 ml) vanilla extract
- 2 cups (280 g) mixed berries (blueberries, raspberries, or lingonberries)
Instructions
- Pulse flour, butter, and sugar until crumbly. Add the egg and mix until a dough forms. Press into a 10-inch pie pan.
- Prick the bottom with a fork and bake at 375°F (190°C) for 10 minutes.
- Whisk together the full-fat Greek yogurt, egg, sugar, and vanilla.
- Spread the berries over the pre-baked crust and pour the yogurt custard over them.
- Bake for 20–25 minutes until the custard is set but still tender.
Pro Tips
- Greek Yogurt Substitute: Full-fat Greek yogurt or a thick sour cream is the best substitute for Finnish rahka, providing the necessary fat content and tang for a traditional result.
