In Finland and Sweden, wild blueberries blanket the forests every summer. This simple, rustic oat crisp (known as kaurapaistos) is the most popular way to enjoy them. It takes just 10 minutes to prep and requires absolutely no dough-rolling or precise baking skills.

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x9-inch baking dish or a deep pie dish.
  2. The Filling: If using frozen blueberries, do not thaw them. Toss the blueberries directly in the baking dish with the cornstarch, sugar, and vanilla extract until the berries are coated. Spread them out into an even layer.
  3. The Crumble: In a medium bowl, combine the rolled oats, flour, brown sugar, and cinnamon.
  4. Add the cold, cubed butter. Using your fingertips or a pastry blender, rub the butter into the dry ingredients until the mixture resembles coarse, buttery clumps.
  5. Sprinkle the oat crumble evenly over the blueberries.
  6. Bake uncovered for 25–30 minutes, until the topping is deeply golden and the blueberry juices are bubbling around the edges.

Serving

Let the crisp cool for 10 minutes so the juices can thicken slightly. Serve warm with a large scoop of premium vanilla ice cream melting over the top.
