Nordic Ham and Potato Bake (Kinkkukiusaus)

A cream-based Finnish casserole made with julienned potatoes and smoked ham. The ultimate one-pan comfort food for busy weeknights.
Ingredients (6 servings)
- 2 lbs (900 g) frozen julienne-cut or shoestring potatoes
- 10 oz (285 g) smoked ham, cut into thin strips
- 2 cups (480 ml) heavy cream
- 1 tsp (6 g) salt
- 1/2 tsp (1 g) black pepper
- 1 tsp (2 g) dried marjoram (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large greased baking dish, layer half of the potatoes, followed by all the ham strips, and then the remaining potatoes.
- In a small bowl, whisk together the heavy cream, salt, pepper, and marjoram.
- Pour the cream mixture evenly over the potatoes and ham.
- Bake for 45–60 minutes until the potatoes are tender and the cream has thickened.
- The dish is ready when the top is a deep golden brown and the internal temperature reaches approximately 160°F (71°C).
- Serve with pickled beets and crisp rye bread, as is traditional in Finland.
Pro Tips
- Keep the Structure: Avoid using shredded hash browns, as they will become too soft. Julienne-cut or shoestring frozen potatoes maintain their structural integrity after absorbing the cream.
