Nordic Lingonberry Quark Pie

Ingredients (8 servings)
- 1 9-inch shortcrust pie crust (pre-baked or store-bought)
- 1.5 cups (210 g) lingonberries (fresh or frozen; may substitute cranberries)
- 1 cup (250 g) vanilla quark or Greek yogurt
- 1/2 tsp (2.5 ml) vanilla extract (if using Greek yogurt)
- 1 large egg
- 1/3 cup (65 g) granulated sugar
Instructions
- Spread the lingonberries (or cranberries) in an even layer across the bottom of the pie crust.
- In a medium bowl, whisk together the quark (or Greek yogurt), egg, and sugar. If using Greek yogurt instead of vanilla quark, add the vanilla extract.
- Pour the mixture over the berries. Bake at 350°F (175°C) for 30 minutes, or until the filling is set and no longer jiggles in the center.
- Allow the pie to cool completely at room temperature before refrigerating. Serve chilled.
