Traditional Nordic Meatballs with Cream Sauce & Mash

Instructions

  1. In a small bowl, combine breadcrumbs and heavy cream. Allow to soak for 10 minutes.
  2. In a separate large bowl, combine the meat blend, grated onion, allspice, and salt. Add the hydrated breadcrumbs.
  3. Mix the ingredients by hand just until combined. Do not overwork the meat, as this will lead to a tough, rubbery protein structure.
  4. Form into 1-inch spheres and brown in a skillet over medium heat until the internal temperature reaches 160°F (71°C). Remove meatballs and set aside.
  5. In the same skillet, whisk flour into the pan drippings to create a paste.
  6. Slowly whisk in the beef broth, scraping the bottom of the pan to release the fond (flavor bits). Add heavy cream and simmer until the sauce coats the back of a spoon.
  7. Return meatballs to the sauce for 2–3 minutes to glaze. Serve over silky mashed potatoes.
