Traditional Nordic Meatballs with Cream Sauce & Mash

Ingredients (4 servings)
Meatballs
- 1 lb (450 g) ground beef and pork blend (50/50)
- 1/2 cup (50 g) plain breadcrumbs
- 1/2 cup (120 ml) heavy cream
- 1 small yellow onion, finely grated
- 1/2 tsp (1 g) ground allspice
- 1 tsp (6 g) kosher salt
Cream Sauce
- 2 cups (480 ml) beef broth
- 1/2 cup (120 ml) heavy cream
- 2 tbsp (30 ml) pan drippings (supplement with butter if needed)
- 2 tbsp (16 g) all-purpose flour
Instructions
- In a small bowl, combine breadcrumbs and heavy cream. Allow to soak for 10 minutes.
- In a separate large bowl, combine the meat blend, grated onion, allspice, and salt. Add the hydrated breadcrumbs.
- Mix the ingredients by hand just until combined. Do not overwork the meat, as this will lead to a tough, rubbery protein structure.
- Form into 1-inch spheres and brown in a skillet over medium heat until the internal temperature reaches 160°F (71°C). Remove meatballs and set aside.
- In the same skillet, whisk flour into the pan drippings to create a paste.
- Slowly whisk in the beef broth, scraping the bottom of the pan to release the fond (flavor bits). Add heavy cream and simmer until the sauce coats the back of a spoon.
- Return meatballs to the sauce for 2–3 minutes to glaze. Serve over silky mashed potatoes.

- The Breadcrumb Soak: This step, known as a panade, is the technical secret to Nordic meatballs. It keeps the proteins moist and prevents the meat from shrinking during the cooking process.
- Onion Texture: Grating the onion rather than dicing it allows the onion juice to emulsify into the meat, providing superior moisture and flavor distribution without compromising the meatball’s structural integrity.
