Ingredients (4 servings)
- 1 large English cucumber (or 3–4 Persian cucumbers)
- 1 bunch fresh dill, finely chopped
- 1 small red onion, thinly sliced (optional)
The Marinade
- 3 tbsp white vinegar
- 3 tbsp granulated sugar
- 1 tsp salt
- 1/2 tsp white pepper (or black pepper)
Instructions
- Wash the cucumber well. Using a mandoline slicer or a very sharp knife, slice the cucumber into very thin rounds.
- In a small bowl, whisk together the white vinegar, sugar, salt, and pepper until the sugar dissolves.
- Place the cucumber slices, fresh dill, and red onion (if using) into a glass jar or a food container with a tight-fitting lid.
- Pour the vinegar marinade over the cucumbers.
- Secure the lid tightly and shake vigorously for about 20–30 seconds.
- Let the salad rest in the refrigerator for at least 15 minutes before serving to let the flavors meld.
Serving
Serve ice-cold alongside grilled meats, baked salmon, or classic Swedish meatballs.
Pro Tips
- The Shake: Shaking the jar physically breaks down the cucumbers slightly, allowing the vinegar to penetrate instantly. It’s much faster than traditional pickling!
- White Pepper: White pepper is commonly used in Nordic cuisine. It provides a sharp, clean heat without altering the color of the dish.
FAQs
- How long does this salad keep in the fridge?
- It stays fresh and crunchy in an airtight container for up to a week. The flavors actually deepen over the first few days!
- Can I make this sugar-free?
- You can reduce the sugar or use a sugar substitute, but a little sweetness is essential to balance the sharp vinegar bite.
