  2. Place the cubed potatoes, carrots, parsnip, and red onion wedges into a large bowl.
  3. Drizzle with olive oil and sprinkle with salt, black pepper, and thyme (if using). Toss well until all the vegetables are evenly coated.
  4. Spread the vegetables in a single layer on the prepared baking sheet. Ensure they are not overcrowded, or they will steam instead of roast.
  5. Roast in the oven for 30 minutes, tossing halfway through, until the vegetables are fork-tender and the edges are caramelized and golden.
  6. Remove the pan from the oven. Crumble the block of feta cheese evenly over the hot vegetables.
  7. Return to the oven for 5 more minutes just to warm the feta slightly.
