A one-pan fusion of the beloved Finnish spinach pancake (pinaattiletut) and the oven pancake (pannukakku). This dish is the ultimate solution for easy, high-protein meal prep.
Ingredients (6 servings)
- 10 oz (280 g) frozen spinach, thawed and squeezed bone-dry
- 3 large eggs
- 3 cups (720 ml) whole milk
- 1.5 cups (190 g) all-purpose flour
- 4 oz (115 g) feta, crumbled
- 4 tbsp (56 g) melted butter
Instructions
- Preheat the oven to 425°F (220°C). Grease a 9x13-inch pan.
- Blend the milk, eggs, flour, and butter until smooth. Stir in the dry spinach.
- Pour into the pan and sprinkle the feta over the top.
- Bake for 25–30 minutes until puffed and golden.

- The Dry Spinach Rule: Squeeze the spinach in a kitchen towel until no liquid remains. Any extra water will prevent the pancake from rising and result in a soggy center.
