Soft Nordic Everyday Bread Rolls (Sämpylät)

  1. In a large bowl, dissolve the yeast and honey in the warm milk. Let it sit for 5–10 minutes until foamy.
  2. Stir in the salt and rolled oats. Gradually add the flour, one cup at a time, mixing until a dough forms.
  3. Add the melted butter and knead the dough (by hand or with a stand mixer) for 5–8 minutes until smooth and elastic.
  4. Cover and let the dough rise in a warm, draft-free spot until doubled in size (approx. 45–60 minutes).
  5. Punch down the dough and shape into 12–15 round rolls. Place on a parchment-lined baking sheet and let rise for another 15 minutes.
  6. Bake at 425°F (220°C) for 10–12 minutes until the tops are golden brown.
