Published: 7/31/2026
A vibrant Eastern European classic embraced by Finland, prized for its deep red color and earthy sweetness. Serve with sour cream and fresh dill.
Ingredients (6 servings)
- 5 large beets, peeled and shredded
- 3 carrots, shredded
- 2 large potatoes, cubed
- 1/2 head of small cabbage, shredded
- 8 cups (1.9 liters) beef or vegetable broth
- 1.5 tbsp (22 ml) red wine vinegar
- 1 tbsp (12 g) sugar
- Salt and pepper to taste
Instructions
- Bring the broth to a boil in a large, heavy pot.
- Add the shredded beets, carrots, potatoes, and cabbage.
- Simmer on low for 45–50 minutes. The slow-cooking of these root vegetables is non-negotiable for developing the soup’s deep red hue and concentrated sweetness.
- Stir in the vinegar and sugar. This brightens the earthiness of the beets.
- Serve with a generous dollop of sour cream and plenty of fresh, chopped dill.
Pro Tips
