Published: 8/31/2026
A cornerstone of Finnish home cooking, Lihakeitto is a clear, nourishing broth filled with tender beef and root vegetables. A high meat-to-potato ratio optimizes the protein content.
Ingredients (6 servings)
- 2 lbs (900 g) extra-lean beef chuck, cubed
- 6 cups (1.4 L) water
- 10 whole allspice berries
- 2 bay leaves
- 3 large carrots, sliced into rounds
- 4 starchy potatoes, cubed
- 1 leek, white part only, sliced
- 1 tsp (6 g) sea salt
Instructions
- Place the beef cubes in a large pot and cover with the water. Bring to a boil and carefully skim the foam from the surface.
- Add the allspice, bay leaves, and salt. Reduce the heat and simmer on low for 1.5 hours until the beef is tender.
- Add the carrots, potatoes, and leeks to the broth.
- Simmer for an additional 20–25 minutes until the root vegetables are soft but not falling apart.
- Remove the bay leaves before serving.
Pro Tips
- The Mouthfeel: Meticulously skimming the foam during the initial boil is the secret to a professional, clear broth that tastes clean and sophisticated.
- Nutritional Profile: Beef chuck is exceptionally rich in zinc and vitamin B12, making this an excellent recovery meal for immune support.
