Traditionally served on Thursdays in Finland, Hernekeitto is a thick, satisfying soup made from dried yellow peas. Generous helpings of lean smoked ham provide a significant protein boost and a deep, smoky undertone.
Ingredients (6 servings)
- 1 lb (450 g) dried yellow peas, soaked overnight
- 1 lb (450 g) lean smoked ham, diced
- 8 cups (1.9 L) water
- 1 large onion, finely chopped
- 1 tbsp (15 g) yellow mustard (plus more for serving)
- 1 tsp (2 g) dried marjoram
Instructions
- Drain the soaked peas and place them in a large soup pot with 8 cups (1.9 L) of fresh water.
- Add the diced ham and chopped onion.
- Bring to a boil, then reduce the heat to a low simmer. Cook for 2.5 to 3 hours, stirring occasionally, until the peas have broken down into a thick, smooth puree.
- Stir in the dried marjoram and 1 tablespoon of mustard.
- Serve hot with an extra dollop of mustard on top.
