Whipped Lingonberry Porridge (Puolukkavispipuuro)

A cloud-like Nordic dessert made by whipping chilled semolina porridge with lingonberries until light, airy, and beautifully pink.
Ingredients (6 servings)
- 1 cup (140 g) lingonberries (fresh or frozen)
- 4 cups (960 ml) water
- 1/2 cup (100 g) sugar
- 1 cup (150 g) semolina flour (or Cream of Wheat)
- Pinch of salt
Instructions
- Boil water and berries for 10 minutes. Optionally strain through a sieve for a smoother texture.
- Add sugar and salt to the berry liquid.
- Slowly rain the semolina into the boiling liquid while whisking vigorously to prevent lumps.
- Simmer on low for 10 minutes, stirring occasionally.
- Remove from heat and allow the mixture to cool to room temperature or colder.
- Once chilled, use an electric mixer on high speed and whip for at least 5–10 minutes until the volume doubles and the color shifts to pale, frothy pink.
