A Mediterranean-style skillet designed for volume and satiety. The addition of cannellini beans provides a dual-source protein boost and significant dietary fiber — all in one pan.
Ingredients (4 servings)
- 1 lb (450 g) large shrimp, peeled and deveined
- 1 can (15 oz / 425 g) cannellini beans, rinsed and drained
- 3 cloves garlic, minced
- 1/2 tsp (1 g) crushed red pepper
- 2 cups (60 g) fresh spinach
- 1 tbsp (15 ml) olive oil
- 2 cups (300 g) cauliflower rice
Instructions
- Heat the olive oil in a large skillet. Sauté the shrimp and garlic for 2–3 minutes until the shrimp curl into a C shape.
- Add the beans and crushed red pepper; cook for 2 minutes to heat through.
- Stir in the spinach until just wilted.
- Serve over sautéed cauliflower rice for a low-carb, high-protein volume meal.

- Sear, Don’t Steam: Pat the shrimp dry with paper towels before cooking to ensure a proper sear rather than steaming.
