Published: 7/31/2026
A rich and creamy chicken pasta featuring the signature tang of Finnish-style blue cheese. This quick skillet dinner comes together in about 30 minutes.
Ingredients (4 servings)
- 12 oz (340 g) dried pasta (penne or fusilli)
- 1 lb (450 g) chicken breast, cubed
- 1.5 cups (360 ml) heavy cream
- 4 oz (115 g) blue cheese, crumbled
- 3 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Boil pasta in salted water until al dente; drain and set aside.
- Sauté chicken cubes in a large skillet until golden and cooked through (165°F (74°C) internal).
- Add minced garlic and cook for 60 seconds until fragrant.
- Reduce heat to medium-low and pour in the heavy cream.
- Incorporate the blue cheese, stirring until the cheese has melted into a cohesive, thickened sauce.
- Fold the cooked pasta into the sauce until every piece is thoroughly coated.
Pro Tips
- Block Cheese: For the best melting, buy cheese in block form rather than pre-crumbled. Pre-crumbled cheeses are treated with anti-caking agents that inhibit smooth melting.
