Creamy Cottage Cheese Pasta Sauce

Ingredients (2 servings)
- 1 cup (240 g) cottage cheese
- 1/4 cup (25 g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 cup (120 ml) tomato puree (canned)
- 1/4 cup (60 ml) reserved pasta water
Instructions
- Process the cottage cheese in a blender or food processor until it is completely smooth and liquid.
- In a saucepan over medium-low heat, sauté the minced garlic in a teaspoon of olive oil (or water) for 1 minute. Stir in the tomato puree and warm through.
- Reduce heat to the lowest setting. Gradually whisk in the pureed cottage cheese and Parmesan. Slowly add the reserved pasta water, whisking constantly until the sauce is velvety. Do not let the sauce boil, as high heat will cause the cottage cheese to curdle.
Pro Tips
- No Boiling: High heat will curdle the cottage cheese. Keep the sauce at the lowest simmer and whisk constantly for a silky emulsion.
