  4. Reduce heat to medium. Add the onion and garlic, sautéing until the onion is translucent and fragrant.
  5. Pour in the heavy cream. Bring to a gentle simmer and let the liquid reduce by approximately one-third.
  6. Transfer the drained pasta into the skillet. Add the parmesan cheese and the reserved pasta water.
  7. Toss the mixture vigorously over medium heat for 60 seconds. This emulsifies the fats with the starches, creating a velvety sauce that clings to the pasta. Season with salt and black pepper.
