- 7–8 oz (200–225 g) block of feta cheese (in brine)
- 1 lb (450 g) cherry tomatoes
- 1/2 cup (120 ml) extra virgin olive oil
- 1/2 tsp (1 g) chili flakes
- 2 cloves garlic, minced
- 12 oz (340 g) dried pasta
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Place the cherry tomatoes in a baking dish and toss with olive oil, garlic, and chili.
- Place the whole block of feta in the center of the dish.
- Bake for 20–25 minutes until the tomatoes burst.
- Increase the oven temperature to 440°F (225°C) and bake for another 5–10 minutes until the top of the feta is slightly browned.
- While the feta bakes, cook your pasta in salted water until al dente.
- Mash the baked feta and tomatoes together with a fork to create a creamy sauce. Toss the cooked pasta into the dish and garnish with fresh basil.
Pro Tips
- Block Feta: Always use a block of feta in brine rather than pre-crumbled cheese. The block retains significantly more moisture, which is essential for the signature creamy consistency.
