Nordic Potato and Meat Hash (Pyttipannu)

In Finland we call this the leftover hero—the Nordic equivalent of a kitchen-sink hash. Crispy potatoes, sausage, and a fried egg on top.

Ingredients (4 servings)

Instructions

  1. Heat butter or oil in a large skillet over medium-high heat.
  2. Add the cubed potatoes. Fry, tossing occasionally, until golden brown and crispy on the outside and tender on the inside.
  3. Add the diced meat and onions to the skillet. Continue frying until the onions are translucent and the meat has browned, crispy edges. Season with salt and pepper.
  4. In a separate non-stick pan, fry the eggs sunny-side up or over-easy.
  5. Plate the hash and place one fried egg on top of each serving. Breaking the yolk over the potatoes is essential.
