Rye-Crusted Pan-Fried Herring Fillets (Silakkapihvit)

A coastal classic made from fresh fillets. These are prepared “sandwich-style” with a dill filling, coated in hearty rye flour, and fried in plenty of butter until they achieve a perfect crunch.

Ingredients (4 servings)

Instructions

  1. Lay half of the fish fillets skin-side down on a clean surface.
  2. Season with salt, white pepper, and a generous amount of chopped dill.
  3. Place another fillet on top, skin-side up, to create a “sandwich.”
  4. Mix the rye flour with a pinch of salt in a shallow bowl.
  5. Dredge each fish sandwich in the rye flour until evenly coated.
  6. Melt butter in a large skillet over medium-high heat.
  7. Fry the fish for 2–3 minutes per side until the crust is dark golden brown and crispy.
  8. Serve immediately with mashed potatoes and a slice of lemon.
