Feta-Crusted Salmon with Roasted Root Veggies (45g Protein)

A winter favorite that combines the saltiness of feta with the sweetness of Nordic root vegetables. The feta forms a protective crust that keeps the salmon succulent.
Ingredients (4 servings)
- 1.5 lbs (680 g) salmon fillet
- 4 oz (115 g) feta, crumbled
- 1 lb (450 g) mixed carrots and parsnips, cubed
- 1 tbsp (~3 g) dried dill
- 2 tbsp (30 ml) olive oil
Instructions
- Preheat the oven to 400°F (200°C). Toss the vegetables in the olive oil and roast for 15 minutes.
- Press the crumbled feta and dried dill onto the salmon.
- Place the salmon on the sheet pan with the vegetables and roast for another 12 minutes.
